Pumpkin Soup
It must be Thanksgiving unless it's not and you just want amazing soup.
Makes one big-assed pot of soup
Ingredients
- 5-6 cups broth
- 2-3 tablespoons butter
- 1 cup half-n-half
- 0.5-1 teaspoons nutmeg
- 1-1.5 cups onion
- 1/2 teaspoon pepper
- 4 cups pumpkin
- 2 teaspoons salt
- 2 tablespoons sugar
Method
- Chop the onions and gently brown with butter in a pan.
- Put mashed pumpkin with onions in pan.
- Add the salt, sugar, nutmeg and pepper.
- Slowly add vegetable broth and heat thoroughly, but do not boil.
- To serve, pour into a tureen and add the half and half.
