Avocado Egg Bake

Start your protein power nap off right.

Ingredients

  • 1 large avocado
  • 1/2 cup cheese shredded
  • 2 eggs
  • 1 tablespoon green onion chopped
  • 1/8 teaspoon pepper

Method

  1. Preheat the oven to 425 degrees.
  2. Slice the avocado in half, and take out the pit. Scoop out enough flesh from the center of each half to allow the egg to fit snugly in the center.
  3. Crack an egg into each half and place them into a small baking dish.
  4. Bake for 15 to 20 minutes. Cooking time will depend on the size of your eggs and avocados. Make sure the egg whites have enough time to set.
  5. Remove from oven, top with cheese, and season with onions and pepper.
