Avocado Egg Bake

Ingredients
- 1 large avocado
- 1/8 teaspoon black pepper
- 1/2 cup cheese shredded
- 2 eggs
- 1 tablespoon green onion chopped
Method
- Preheat the oven to 425 degrees.
- Slice the avocado in half, and take out the pit. Scoop out enough flesh from the center of each half to allow the egg to fit snugly in the center.
- Crack an egg into each half and place them into a small baking dish.
- Bake for 15 to 20 minutes. Cooking time will depend on the size of your eggs and avocados. Make sure the egg whites have enough time to set.
- Remove from oven, top with cheese, and season with onions and pepper.
