Black Bean Patties
These are "just" ... "like" ... the real thing.
Makes 4 sandwiches
Ingredients
- 16 ounces black beans drained and rinsed
- 1/2 cup bread crumbs
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 eggs
- 3 cloves garlic peeled
- 1/2 a green bell pepper
- 1 teaspoon hot sauce or thai chili sauce
- 1/2 an onion
Method
- Preheat oven to 375 degrees and lightly oil a baking sheet.
- In a medium bowl, mash black beans with a fork until thick and pasty.
- In a food processor, finely chop bell pepper, onion, and garlic and stir into mashed beans.
- In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
- Combine egg mixture with mixture of mashed beans.
- Mix in bread crumbs until it’s sticky and holds together.
- Divide into four patties.
- Place patties on baking sheet and bake about 10 minutes on each side.
