Egg Salad Sandwich
Think of them as gourmet gas station egg salad sandwiches. The kind you CAN serve to children.
Makes 4 sandwiches
Prep Time: 35 minutes
Ingredients
- bread enough for 4 sandwiches
- 2 spears celery washed and chopped
- 1/2 cup chives chopped
- 6 large eggs
- 1/2 squeeze lemon juice
- pepper
- salt
- several pounds spinach as much as you can fit
- at least 2 tablespoons yogurt
Method
- Place the eggs in a pot and cover with cold water by 1/2 an inch.
- Bring to a gentle boil.
- Turn off the heat, cover, and let sit for 7 minutes.
- Prepare a big bowl of ice water.
- When the eggs are done cooking place them in the ice bath for 3 minutes.
- Crack and peel each egg, then place in a medium mixing bowl.
- Add yogurt and a couple of generous pinches of salt and pepper amd mash with a fork. (Don’t overdo it, you want the egg mixture to have some texture. If you need to add a bit more yogurt to moisten up the mixture a bit, go for it a bit at a time)
- Stir in the celery and chives.
- Taste – add more salt and pepper if needed.
- Make them sandwiches.
