Egg Salad Sandwich

Think of them as gourmet gas station egg salad sandwiches. The kind you CAN serve to children.
Makes 4 sandwiches

Ingredients

  • bread enough for 4 sandwiches
  • 2 spears celery washed and chopped
  • 1/2 cup chives chopped
  • 6 large eggs
  • 1/2 squeeze lemon juice
  • pepper
  • salt
  • several pounds spinach as much as you can fit
  • at least 2 tablespoons yogurt

Method

  1. Place the eggs in a pot and cover with cold water by 1/2 an inch.
  2. Bring to a gentle boil.
  3. Turn off the heat, cover, and let sit for 7 minutes.
  4. Prepare a big bowl of ice water.
  5. When the eggs are done cooking place them in the ice bath for 3 minutes.
  6. Crack and peel each egg, then place in a medium mixing bowl.
  7. Add yogurt and a couple of generous pinches of salt and pepper amd mash with a fork. (Don’t overdo it, you want the egg mixture to have some texture. If you need to add a bit more yogurt to moisten up the mixture a bit, go for it a bit at a time)
  8. Stir in the celery and chives.
  9. Taste – add more salt and pepper if needed.
  10. Make them sandwiches.
