Mayan Burritos
The secret is the sweet potato. Don't tell anyone.

Ingredients
- 1 small avocado
- 15 ounces black beans - cooked
- 2 green onion minced
- 1 cup spinach baby
- 2 cups sweet potato
- 1 tomato diced
- 4 tortillas 10 inch
- 1/2 cup yogurt
Method
- Heat black beans in small sauce pan over low heat for about 5 minutes or until steaming hot.
- Cook or heat sweet potatoes until able to mash with fork or potato masher.
- Lay tortillas flat on dinner plate and spread 1/3 cup sweet potatoes and then add the same amount of beans on top.
- Add the remaining ingredients as desired.
- Fold and enjoy.
