Mung Bean Curry

Fun bean curry!
Mung beans

Ingredients

  • 1/2 cup avocado oil
  • 4 tablespoons coconut butter
  • 1 tablespoon coriander
  • 2 cups crushed tomatoes
  • 8 cloves garlic minced
  • 4 teaspoons ginger (2-inch piece) peeled and finely chopped
  • 6 medium lime
  • 3 cups mung beans
  • 3 teaspoons salt
  • 1 teaspoon turmeric (1-inch piece) peeled and finely chopped

Method

  1. Add the oil to the instant pot. Hit the sauté button. Add (optional) cumin seeds and cook for about a minute.
  2. Add the garlic. Cook the mixture for 3-4 minutes careful to not let the garlic burn.
  3. Stir in the crushed tomatoes. Add the ginger, coriander, turmeric, and salt. Continue cooking for a few minutes.
  4. Add mung beans and 8 cups water. Close the instant pot and set to pressure cook on high for 10 minutes.
  5. Allow the pressure to release naturally.
  6. Stir in the coconut butter and the lime juice.
