Pan con Tomate

Ingredients

  • 1 teaspoon basil
  • 1 bread loaf
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • 1 tablespoon pepper
  • 1 teaspoon rosemary
  • 1 teaspoon salt
  • 3 pounds tomato

Method

  1. Slice tomatoes in half. Using the large holes of a box grater, grate the cut faces of the tomatoes by using the flattened palm of your hand and moving the tomatoes back and forth. The flesh of the tomato should be grated off, while the skin remains intact in your hand. Discard the skin… or eat it, I don’t care. Just don’t cut yourself.
  2. Combine the tomatoes, spices, and oil in a large bowl and stir together. Feel free to substitute an Italian blend if you don’t have basil, oregano, or rosemary on hand.
  3. Spread over toast and serve.
