Pumpkin Soup

It must be Thanksgiving unless it's not and you just want amazing soup.
Makes one big-assed pot of soup

Ingredients

  • 5-6 cups broth
  • 2-3 tablespoons butter
  • 1 cup half-n-half
  • 0.5-1 teaspoons nutmeg
  • 1-1.5 cups onion
  • 1/2 teaspoon pepper
  • 4 cups pumpkin
  • 2 teaspoons salt
  • 2 tablespoons sugar

Method

  1. Chop the onions and gently brown with butter in a pan.
  2. Put mashed pumpkin with onions in pan.
  3. Add the salt, sugar, nutmeg and pepper.
  4. Slowly add vegetable broth and heat thoroughly, but do not boil.
  5. To serve, pour into a tureen and add the half and half.
