Red Lentil Curry
What's black and white and red all over? Well this recipe is red... but it's not black and white.

Ingredients
- 1/2 cup coconut milk
- 1/2 teaspoon cumin
- 2 teaspoons garam masala
- 1 clove garlic minced
- 1 teaspoon ginger ground
- 1 cup kale chopped
- 1 medium onion chopped
- 1/2 cup quinoa
- 3 tablespoons red curry paste
- 2 cups red lentils
- 1 teaspoon salt
- 24 ounces strained tomatoes
- 1/2 teaspoon turmeric
Method
- Prep all ingredients including any other vegetables you have on hand.
- Combine all but the coconut milk and salt into the crock pot.
- Add 24oz of water.
- Set the crock pot to low and cook for 6 hours until lentils are soft.
- Mix in the coconut milk and salt. Top with green onions if you have them on hand.
