Red Lentil Curry

What's black and white and red all over? Well this recipe is red... but it's not black and white.

Ingredients

  • 1/2 cup coconut milk
  • 1/2 teaspoon cumin
  • 2 teaspoons garam masala
  • 1 clove garlic minced
  • 1 teaspoon ginger ground
  • 1 cup kale chopped
  • 1 medium onion chopped
  • 1/2 cup quinoa
  • 3 tablespoons red curry paste
  • 2 cups red lentils
  • 1 teaspoon salt
  • 24 ounces strained tomatoes
  • 1/2 teaspoon turmeric

Method

  1. Prep all ingredients including any other vegetables you have on hand.
  2. Combine all but the coconut milk and salt into the crock pot.
  3. Add 24oz of water.
  4. Set the crock pot to low and cook for 6 hours until lentils are soft.
  5. Mix in the coconut milk and salt. Top with green onions if you have them on hand.
