Stuffed Peppers

Try and eat as many as you can at once.
Makes 4 peppers

Ingredients

  • 4 bell pepper
  • 15 ounces black beans
  • 1 cup corn
  • 2 cloves garlic
  • 1/2 jalapeno
  • 1/4 cup onion
  • 1/2 cup quinoa
  • 1 tomato diced
  • 1-2 cups tomato puree crushed

Method

  1. Preheat oven to 375 degrees.
  2. Cook the quinoa.
  3. Cut tops off peppers and boil for 5 min, then dry and place in baking dish.
  4. Saute garlic, onions, corn, tomato, and jalapeno. Combine with beans, rice, tomato puree, and spices.
  5. Fill peppers with mixture.
  6. Cover with foil, and 1/3 cup water to dish, and bake for 40 minutes.
  7. Remove foil, top with cheese, and cook for another 10 minutes.
