Stuffed Peppers
Try and eat as many as you can at once.
Makes 4 peppers
Ingredients
- 4 bell pepper
- 15 ounces black beans
- 1 cup corn
- 2 cloves garlic
- 1/2 jalapeno
- 1/4 cup onion
- 1/2 cup quinoa
- 1 tomato diced
- 1-2 cups tomato puree crushed
Method
- Preheat oven to 375 degrees.
- Cook the quinoa.
- Cut tops off peppers and boil for 5 min, then dry and place in baking dish.
- Saute garlic, onions, corn, tomato, and jalapeno. Combine with beans, rice, tomato puree, and spices.
- Fill peppers with mixture.
- Cover with foil, and 1/3 cup water to dish, and bake for 40 minutes.
- Remove foil, top with cheese, and cook for another 10 minutes.
