Vegetarian Chili
This is Texas chili because we live in Texas. This is vegetarian chili because just look at it.

Ingredients
- 2 cups black beans rinsed
- 2 tablespoons chili powder
- 2 cups crushed tomatoes
- 2 cups frozen corn
- 1 cup kidney beans rinsed
- 1/2 an onion diced
- 3/4 cup quinoa
- 1 medium red bell pepper diced
- 1-2 medium squash sliced and quartered
- 7 ounces tomato paste
- 1 medium yellow bell pepper diced
- 1-2 medium zucchini sliced and quartered
Method
- Combine ingredients in a crock pot.
- Add 4-5 cups water and stir.
- Set on high and let cook several hours, stirring occasionally.
- Serve with shredded cheese and a dollop of yogurt.
