Vegetarian Chili

This is Texas chili because we live in Texas. This is vegetarian chili because just look at it.

Ingredients

  • 2 cups black beans rinsed
  • 2 tablespoons chili powder
  • 2 cups crushed tomatoes
  • 2 cups frozen corn
  • 1 cup kidney beans rinsed
  • 1/2 an onion diced
  • 3/4 cup quinoa
  • 1 medium red bell pepper diced
  • 1-2 medium squash sliced and quartered
  • 7 ounces tomato paste
  • 1 medium yellow bell pepper diced
  • 1-2 medium zucchini sliced and quartered

Method

  1. Combine ingredients in a crock pot.
  2. Add 4-5 cups water and stir.
  3. Set on high and let cook several hours, stirring occasionally.
  4. Serve with shredded cheese and a dollop of yogurt.
