Huevos Rancheros

Rancheros is Spanish for eggs. Huevos is Spanish for balls. These rancheros are all man.
Serves 4

Ingredients

  • 2 cups black beans drained
  • butter
  • 2 cups cheese grated pepper jack
  • cilantro chopped
  • 1 teaspoon cumin
  • 8 eggs
  • 5 cloves garlic minced
  • 3/4 cup green bell pepper chopped
  • 1 medium jalapeno minced
  • 2 tablespoons olive oil
  • 1 cup onion chopped
  • salsa
  • 1/2 teaspoon salt
  • 3/4 cup tomato diced
  • 8 tortillas 6-inch
  • yogurt

Method

  1. Preheat the oven to 400 degrees.
  2. Grease a large baking sheet.
  3. Heat the oil in a skillet over medium heat.
  4. Saute the onion, green pepper, jalapeno, and garlic until soft, about 5 minutes.
  5. Stir the onion mixture into the mashed beans, along with the tomato, salt, and cumin.
  6. Wipe out the skillet, and heat it over low heat.
  7. Lightly coat both sides of each tortilla with butter and salsa, and saute them, one at a time, for about a minute on each side.
  8. Place the finished tortillas in a single layer on the baking sheet.
  9. Divide the bean mixture among the tortillas, spreading it evenly.
  10. Sprinkle on the grated cheese.
  11. Bake for about 10 minutes, until the cheese is nicely melted.
  12. Meanwhile, melt additional butter in a large skillet over medium heat, and fry the eggs the way you like them.
  13. Transfer the baked tortillas to plates, and top each with a fried egg.
  14. Garnish with sour cream, cilantro, and additional salsa if you like.
