Huevos Rancheros
Rancheros is Spanish for eggs. Huevos is Spanish for balls. These rancheros are all man.
Serves 4
Ingredients
- 2 cups black beans drained
- butter
- 2 cups cheese grated pepper jack
- cilantro chopped
- 1 teaspoon cumin
- 8 eggs
- 5 cloves garlic minced
- 3/4 cup green bell pepper chopped
- 1 medium jalapeno minced
- 2 tablespoons olive oil
- 1 cup onion chopped
- salsa
- 1/2 teaspoon salt
- 3/4 cup tomato diced
- 8 tortillas 6-inch
- yogurt
Method
- Preheat the oven to 400 degrees.
- Grease a large baking sheet.
- Heat the oil in a skillet over medium heat.
- Saute the onion, green pepper, jalapeno, and garlic until soft, about 5 minutes.
- Stir the onion mixture into the mashed beans, along with the tomato, salt, and cumin.
- Wipe out the skillet, and heat it over low heat.
- Lightly coat both sides of each tortilla with butter and salsa, and saute them, one at a time, for about a minute on each side.
- Place the finished tortillas in a single layer on the baking sheet.
- Divide the bean mixture among the tortillas, spreading it evenly.
- Sprinkle on the grated cheese.
- Bake for about 10 minutes, until the cheese is nicely melted.
- Meanwhile, melt additional butter in a large skillet over medium heat, and fry the eggs the way you like them.
- Transfer the baked tortillas to plates, and top each with a fried egg.
- Garnish with sour cream, cilantro, and additional salsa if you like.
Sauteing the tortillas with butter and salsa gives them a better flavor, texture, and color.
