Mung Bean Curry
Fun bean curry!
Ingredients
- 1/2 cup avocado oil
- 4 tablespoons coconut butter
- 1 tablespoon coriander
- 2 cups crushed tomatoes
- 8 cloves garlic minced
- 4 teaspoons ginger (2-inch piece) peeled and finely chopped
- 6 medium lime
- 3 cups mung beans
- 3 teaspoons salt
- 1 teaspoon turmeric (1-inch piece) peeled and finely chopped
Method
- Add the oil to the instant pot. Hit the sauté button. Add (optional) cumin seeds and cook for about a minute.
- Add the garlic. Cook the mixture for 3-4 minutes careful to not let the garlic burn.
- Stir in the crushed tomatoes. Add the ginger, coriander, turmeric, and salt. Continue cooking for a few minutes.
- Add mung beans and 8 cups water. Close the instant pot and set to pressure cook on high for 10 minutes.
- Allow the pressure to release naturally.
- Stir in the coconut butter and the lime juice.
